Sucralose (E955)
Sucralose (trichlorogalactosucrose, TGS) was discovered by Tate
& Lyle in the 1970s. It is 600 times sweeter than sugar and has
a sugar-like taste.
Its main advantage is that it is very soluble and therefore
useful in concentrated products such as dispense syrups. It is also
very stable, meaning that there is no loss of sweetness over the
product shelf life.
