Acidity
The acidity of a drink is the measure of its acid content. For
example the acidity of orange juice is measured by the percentage
of citric acid present
Additive
An additive is defined in the Food
Labelling Regulations as any substance not commonly regarded or
used as food which may be added to food to improve its keeping
qualities, texture, consistency, appearance, taste, odour,
alkalinity or acidity
ADI
Acceptable Daily Intake. The amount of a food additive, expressed
as mg/kg body weight that can be consumed daily over a lifetime
without incurring any appreciable health risk
AIJN
European Fruit Juice Association
Ambient
juice
Also known as long life juice is usually made from concentrate and
heat treated. It has a shelf life of up to 18 months when stored at
ambient temperature
Aseptic
concentrate
Fruit concentrate is heated to destroy any micro-organisms and is
filled into a large aluminium foil-bag under aseptic conditions and
sealed. Does not require frozen storage
Aseptic
conditions
Micro-organism free environment under which fruit juices can be
filled and packed
